this morning i woke up early to buy unsweetened vanilla almond milk at safeway. then i baked away and made these classic crispy vegan chocolate chip cookies. personally, i think that perhaps the only thing stopping these cookie delights from fitting in with the word "classic" is that they contain a heavy coconut taste due to the coconut oil ingredient, compared to regular chocolate chip cookies that don't. but other than that.. seriously, coconut oil makes all the difference to baked goods! :-) this is the simple recipe i used. the semi-sweet chocolate mini chips i used are dairy, nut, and soy free from the brand enjoy life. (they now put out the enjoy life brand in the chocolate chips/baking section at target!) i had nine cookies already and the day isn't even close to ending yet...danger everywhere.
and the first picture is the kind of dark chocolate bar that i enjoy eating most from trader joe's.
