yum!
Ingredients
- 1 cup natural sugar
- 1/4 cup smooth natural peanut butter
- 2 tablespoons coconut oil
- 1/4 cup almond milk
- 1 tablespoon vanilla extract
- 1 1/2 cups rolled oats
- 3 tablespoons cocoa powder
- 1 1/2 tablespoons espresso powder
Instructions
- In a small sauce pan combine the first four ingredients and heat over medium-low heat until the peanut butter/coconut oil is melted and the mixture is hot (4-5 minutes.) Remove from heat and stir in vanilla.
- In a separate bowl combine the rolled oats, cocoa powder, and espresso powder. Pour the hot peanut butter mixture over the oats and stir until every piece of oat is covered and chocolate is well incorporated. Use a spoon and drop cookies onto a surface covered in parchment paper and flatten them out slightly. Let cool and harden. I made a dozen 2″ cookies (but I’m not so sure how much I spooned into my mouth before they became cookies….)
i think me and john are going to try naturally ella's recipe later tonight! hopefully they turn out all right. it looks like we'll have to to pay another trip to trader joe's for baking ingredients, leave room for the gym, and fit in dinner plans at zephyr tonight. we want some of their vegan apple pie with soy ice cream! or maybe just the apple pie....
yesterday, me and john bought these fresh vegan trail mix and oatmeal chocolate cookies at trader joe's and we are still happily floating with glee! i shall start working on my persuasive speech at the moment. today is also laundry day, so that will take until hopefully 3:30 pm. it really is such a beautiful day out. a part of me is craving for a trip to seal beach. fridays always feel like saturdays to us. cheers to no friday classes. time to get our game together! i love spring time weather.
